How to Prep 7 meals in 7 minutes!

You guyyyyys! I just did something I’ve never done before! I just shot my very first HOW TO YouTube video! (Link) 

After getting multiple requests I guess its about time I jump on the horse and start giving the people what they want! And this week it’s crock pot meal plans! 

Now if you know me you’ll know I’m a crockpot lover! That appliance and I are closer than peanut butter and jelly! 

There really is nothing better than coming home after a long day to a hot meal all ready to go for you! 

As a mom of 2 kids, 5 chickens, 5 horses, 3 dogs and a husband, there is never dull moments around here. (And I mean NEVER!)

Between running the kids to and from their activities, feeding the farm, working, bloggin, vlogging, podcasting, consulting, keeping up on laundry and trying to breath during it all can seem impossible at times. 

So just like most moms my plate is full! 

And adding one more thing to that plate like making dinner, can be the straw that breaks the moms back! 

Usually resulting in indulging in junk food, grabbing fast food or eating a meal that just doesn’t give you the satisfaction of a good healthy home cooked dinner. 

Thats where meal prepping comes in! 

Guys this will truly be your life saver and you’ll wonder why in the H-E-DOUBLE-HOCKEY-STICKS you haven’t tried this sooner! 

I’ve been meal prepping for a few years now and I cant even imagine going back to the “what do you want for dinner” conversation. 

This week I’ve decided to share 7 freezer friendly crockpot recipes! 

These recipes are sooo easy, delicious and get this….they are even Healthy! 

I hear all the time how crockpot meals are just soupy meals with creamy fattening ingredients. 

Do those recipes exist? Yes. Are they your only option? NO! 

Here I’ve shared my 7 favorite crockpot recipes as of lately! 

They are healthy, easy, kid friendly, hubby approved and get this…. It all cost $120!!!

$120 divided by 7 meals divided by 4 people = $4.5 a meal per person!! 

Wait what!???! You couldn’t even get that off the dollar menu at mcdonalds! 

Oh ya and did I mention I use mostly all organic ingredients?? Ya mic drop.

I mean at this point I don’t think I need to convince you any more! 

Here are this weeks 7 crockpot meals! Enjoy!

Taco Soup

Ingredients: 

2 boneless skinless organic chicken breast ( I get mine from Costco) 

1 can black beans 

1 can chili beans 

1 can corn 

2 cans diced tomatoes with green chilies 

1 can tomato sauce (8 oz) 

1/2 C chicken broth 

1 packet taco seasoning 

Directions: 

Place all ingredients into a freezer-friendly-gallon-zip-lock-bag and freeze. (Say that 3 times fast!!)

Meal can be stored in freezer up to 2 months!

If you aren’t freezing you can skip this step and put all your ingredients directly into the crockpot 

(You can also store your meal in the fridge as long as you eat it within two or three days) 

Cooking:

Thaw ingredients by placing ziplock bag in the fridge 24 hours before cooking. 

(You can also set the ziplock bag in the sink to thaw quicker but my 7th grade Health and foods teacher didn’t recommend that method lol) 

Once thawed dump ingredients into greased crock pot (I like to grease mine with olive oil) 

Cook on high for 4 hours or low for 8 hours. 

Once chicken is cooked throughout shred and stir soup.  

Serve and add toppings of your choice! 

Our family favorite toppings are: 

Avocado 

Cilantro 

Tortilla chips 

Sour cream 

& even a little cheese! 

Serves 4 

BBQ Chicken 

Ingredients: 

4 Boneless, skinless organic chicken breast (again I get mine at costco)

1/2 bottle of Sweet Baby Rays Bbq Sauce (or a bbq sauce of your choice) 

Directions: 

Place all ingredients into a freezer friendly gallon Zip Lock bag and freeze. 

Meal can be stored in freezer up to 2 months!

If you aren’t freezing you can skip this step and put all your ingredients directly into the crockpot 

(You can also store your meal in the fridge as long as you eat it within two or three days) 

Cooking:

Thaw ingredients by placing ziplock bag in the fridge 24 hours before cooking. 

Once thawed dump ingredients into greased crock pot (I like to grease mine with olive oil) 

Cook on high for 4 hours or low for 8 hours. 

We love to shred our bbq chicken and put it on a green salad. Add black beans, tomatoes, avocados, cilantro and whatever else you want on your BBQ chicken salad. 

For the dressing, spoon out some of the bbq sauce straight from the crockpot and pour it on top of your salad. Ranch dressing also pairs nicely with this! 

If you aren’t into salads this BBQ chicken makes a meal with sweet potatoes, corn on the cob, baked beans, maybe even some watermelon! 

You could also make bbq chicken tacos, sandwiches or pizza! The possibilities are endless! 

Serves 4 

Teriyaki Chicken 

Ingredients: 

2 Boneless, skinless, organic chicken breasts (costco) 

1 bottle of your favorite Teriyaki sauce! 

Im still on the hunt for my favorite healthy bottle but todays video I used Kona Coast Island Teriyaki sauce. 

Directions: 

Place all ingredients into a freezer friendly gallon Zip Lock bag and freeze. 

Meal can be stored in freezer up to 2 months!

If you aren’t freezing you can skip this step and put all your ingredients directly into the crockpot 

(You can also store your meal in the fridge as long as you eat it within two or three days) 

Cooking

Thaw ingredients by placing ziplock bag in the fridge 24 hours before cooking. 

Once thawed dump ingredients into greased crock pot (I like to grease mine with olive oil) 

Cook on high for 4 hours or low for 8 hours. 

Once chicken is cooked through out you can steam some veggies to go on top of your teriyaki chicken rice bowl! 

My go to veggies are broccoli & carrots. 

I cut up baby carrots into even smaller strips so I can steam carrots and broccoli at the same time! 

Cooking veggies will only take about 5 min! 

You’ll know when veggies are ready when your broccoli turns bright green and you can poke a fork easily through your broccoli florets. (You don’t want to steam all the nutrients out of your veggies so you still make sure your broccoli still has aa little crunch! 

Serve teriyaki chicken over a bed of rice, brown rice or quinoa. 

Dump steamed veggies on top and voila! Teriyaki chicken rice bowl! Yummy! 

Serves 4 

Steak Fajitas 

Ingredients: 

1-2lbs steak strips 

2 green peppers 

2 red peppers 

1 yellow pepper

1 packet fajita seasoning 

1-2 cups salsa 

Directions: 

Place all ingredients into a freezer friendly gallon Zip Lock bag and freeze. 

Meal can be stored in freezer up to 2 months!

If you aren’t freezing you can skip this step and put all your ingredients directly into the crockpot 

(You can also store your meal in the fridge as long as you eat it within two or three days) 

Cooking

Thaw ingredients by placing ziplock bag in the fridge 24 hours before cooking. 

Once thawed dump ingredients into greased crock pot (I like to grease mine with olive oil) 

Cook on high for 4 hours or low for 8 hours. 

Serve on whole wheat tortillas & top with all your favorite toppings! 

We love to use: 

Sour cream 

Salsa 

Avocados 

Tomatoes 

Black beans 

Serves 4 

Mongolian Beef 

Ingredients: 

1-2 lbs steak strips 

1/2 cup soy sauce 

1/2 cup brown sugar 

Directions: 

Place all ingredients into a freezer friendly gallon Zip Lock bag and freeze. 

Meal can be stored in freezer up to 2 months!

If you aren’t freezing you can skip this step and put all your ingredients directly into the crockpot 

(You can also store your meal in the fridge as long as you eat it within two or three days) 

Cooking

Thaw ingredients by placing ziplock bag in the fridge 24 hours before cooking. 

Once thawed dump ingredients into greased crock pot (I like to grease mine with olive oil) 

Cook on high for 4 hours or low for 8 hours. 

Once meat is cooked throughout serve on top of brown rice or quinoa. 

Chop up green peppers into little pieces and sprinkle on top! 

Serves 4 

Cilantro Lime Chicken 

Ingredients: 

4 Boneless, skinless organic chicken breasts

Bottle of salsa (16 oz)

2 limes 

1/3 cup cilantro chopped 

Directions: 

Place all ingredients into a freezer friendly gallon Zip Lock bag and freeze. 

Meal can be stored in freezer up to 2 months!

If you aren’t freezing you can skip this step and put all your ingredients directly into the crockpot 

(You can also store your meal in the fridge as long as you eat it within two or three days) 

Cooking

Thaw ingredients by placing ziplock bag in the fridge 24 hours before cooking. 

Once thawed dump ingredients into greased crock pot (I like to grease mine with olive oil) 

Cook on high for 4 hours or low for 8 hours. 

Once chicken is cooked throughout, shred and serve over taco shells or tortillas of your choice! 

Top with: 

Tomatoes 

Avocados 

Black beans 

Mixed greens 

Serves 4

French Dip 

Ingredients: 

Round roast 

1 packet auju sauce 

1 packet French onion soup mix 

1 can beef broth 

Directions: 

Place all ingredients into a freezer friendly gallon Zip Lock bag and freeze. 

Meal can be stored in freezer up to 2 months!

If you aren’t freezing you can skip this step and put all your ingredients directly into the crockpot 

(You can also store your meal in the fridge as long as you eat it within two or three days) 

Cooking

Thaw ingredients by placing ziplock bag in the fridge 24 hours before cooking. 

Once thawed dump ingredients into greased crock pot (I like to grease mine with olive oil) 

Cook on high for 4 hours or low for 8 hours. 

Once beef is cooked through out, shred. 

Serve on French bread of hoagie rolls. 

*I like to toast my bread in the oven with some provolone cheese! 

This is the hubby’s favorite! 

Place meat on sandwich and dip in Au ju sauce!
